Walnut and Strawberry Banana Bread

Getting my banana bread game on again and decided to add some little extra ingredients! Walnuts and strawbs🍓🍌 Ridiculously easy to make with 15 mins for prep and 50 minutes to cook, so you can get on with your daily chores.

Definelty recommend this loaf for snacking on or even for breakfast! Stupidly soft and spungey with slight crunch of walnuts and bursts of strawberry! Paired well with a drizzle of PB and honey on top🤪! (I just can't not try it with peanut butter, let's be real🤷🏽♀️)
Lots of fibre in this loaf! I used whole meal bread flour because its packed with vital nutrients; protein, fiber, B vitamins and antioxidants.
Packed with heavenly spices! Cinnamon and nutmeg to make that homely taste and also makes your house smell amazing.

INGREDIENTS
- 1 tsp baking powder
- 2 eggs
- 2 ripe bananas
- 1.5 cups whole meat bread flour
- 3/4 cups coconut sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 100g chopped strawberries (quartered)
- 1/2 cup roughly chopped walnuts
- pinch of salt
WHAT TO DO
Preset oven to 180. Mash bananas and mix in all wet ingredients. Add flour, sugar, baking powder, nutmeg, cinnamon and mix until creamy. Fold in strawberries and walnuts. Pour into loaf tin and cook for 50 mins on 180🤗
NOTES
If you can get your hands on a silicone baking tray its extra easy to take out. Don't worry if not, just make sure your grease your tray before hand.
