Chunky Chocolate Chip Vegan Cookies

Gorgeous cookies filled with chunks of dark and milk chocolate with a crunchy outside and a gooey centre- just how I like them! Perfect for a melt in the mouth snack, also washes down perfect with a glass of milk or a cuppa. An easy peasy baking method with 9 handy ingredients!

I would have like to make these more protein based, however I ran out of my protein yesterday morning! Waiting on some Whey protein from myprotein.com and the flavours are intense... I ordered Cinnamon Danish and Blueberry Cheesecake! I cannot wait to try them out in lots of different recipes🤤 (I'll give the verdict asap).

INGREDIENTS
- 1 cup plain white flour
- 2 tbsp milk, any you wish (I used almond)
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup of coconut sugar or brown sugar
- 2 tbsp of oil
- 1 tso vanilla extract
- 1/4 cup dark chocolate chips
- 6 squares milk chocolate
WHAT TO DO
1. Pre heat oven at 180 and place some baking paper onto baking tray.
2. Mix all the ingredients in a large mixing bowl. Lastly folding in dark chocolate chips.
3.Using an ice cream scoop, scoop 1 portion of cookie dough and stuff in 1 chocolate milk square in each. You may need to add a little more dough to properly cover your milk chocolate square.
4. Place in the oven for 15 mins or until golden.
NOTES: If you feel the need for more cookies (not judging) try halving your milk chocolate chunk in 2 and hopefully this should result in around 10-12 cookies. You can just used the dark chocolate chips if this satisfies your chocolate cravings!
