HEALTHY PB + J DONUTS!

Another peanut butter snack for you to feast your eyes on and made with 9 key ingredients! Had a night off work this weekend and decided to plunge right into baking some donuts (I'd been planning to make some for a while and needed to wait on my donut tray to arrive in the post).



Thats right BAKED donuts which meant they came out extra light and spongy! These were my first batch of donuts that I'd ever made and I was pretty pleased with the outcome AND they'll definitely not be the last 🤪 I spent longer than I'd hoped making them because I only ordered 1 donut tray and had a lot of mixture to go through! In the end it made 18 perfect rings and they were delightful.


Quantity: 18 donuts

Prep time: 10 mins

Cook time: 12 mins

(If you have the right amount of donut trays 🤣)


INGREDIENTS

- 2 eggs

- 1/3 cup Peanut Butter

- 1 cup wheat flour

- 1/3 coconut sugar

- 1/2 cup full fat coconut milk

- 1 tsp granulated sweetener

- 2 tsp baking powder

- 1/3 cup Jam

- 3 tbsp coconut oil melted


TOPPING - OPTIONAL

- Sweet chocolate freedom choc sauce

- Melted Peanut butter


WHAT TO DO

1. Pre heat oven to 180.

2. Mix eggs, coconut oil and milk in a large mixing bowl.

3. Next, mix in peanut butter until creamy.

4. Gently pour in flour, sugar, sweetener and baking powder gradually mixing as you go.

5. Add your jam (Optional which flavour you'd like to use, I used strawberry jam or even use your own if you wish).

6. Fill donut tray with mixture and bake for 12 mins.

7. Add your desired topping!


NOTES

- These would also be lush as muffins if you don't have a donut tray!

- This is the silicone donut tray I used which makes it extra easy to push out your donuts with no sticking! You can spray with cooking spray too if you wish.
