PB Cookie Obsession

Homemade healthy cookies in under 15 minutes... what more could you want?! These chewy, chocolatey, peanutty cookies definitely hit the sweet craving on the head and only need simple ingredients, which is another reason why I love this recipe, and also flourless, BONUS!


These babies are 100% for the peanut lovers out there!


How are these healthy you ask?

Well, allow me to explain!


Peanut butter

Peanut butter is packed with the good stuff! "Healthy fats"is a common benefit that people use to describe peanut butter and some are afraid of its high calorific content and too much can be bad for your health. In fact, both these points are true! The Monounsaturated fat in PB helps to reduce cholesterol level and intern reduces risk of heart disease. Protein is an important macronutrient in PB, that makes you feel fuller for longer (PERFECT), alongside potassium which keeps your central nervous system under control and lowers blood pressure.


Oats

Whole grain foods are always important because of their nutritiously dense compound, for example being high in antioxidants, oats decrease chance of infections and has benefits for the skin. Oats or oatmeal contains soluble fibre called Beta-Glucan, which improves healthy gut bacteria and the feeling of being full!


Chocolate Chips

HMMmmmmm, one might call these a guilty pleasure! A little chocolate can't harm. BUT, they can be made without!


OR...


Substitute them for a healthier option like raisins, cranberries, blueberries...your choice, the list is endless,

Enough of me waffling on! Get your hands on the recipe. ENJOY!


INGREDIENTS

- 1 cup peanut butter

- 2/3 cup brown sugar

- 2 eggs

- 3/4 cup oats

- 1/2tsp baking powder

- 2/3 chocolate chips or substitute

- dust with icing sugar



WHAT TO DO

1). Pre heat oven at 180 degrees and line a baking tray with baking paper.

2). Mix together oats and baking powder in a small bowl and set aside for later.

3). In a larger bowl mix eggs, peanut butter and sugar until a smooth paste and then add small bowl 4). ingredients to mix and fold. Pop in chocolate chips or substitute and fold again.

5). (Time for the sticky part!) Use a table spoons size portion of the mixture and roll into and ball in your fingertips, then press the ball down into a cookie shape on your baking paper.

6). Repeat this until all mixture is used. Place cookies into the oven for 9 minutes until edges begin to golden.
