Peanut Butter and White Chocolate Banana Bread

Yes, you read correctly! Peanut butter and white chocolate are one of my favourites, so why not add them into a banana bread recipe? 👏👏👏


This is one of many banana bread baking Sundays! Honestly, I've been trying to make bread for a while and never managed to get the right consistency but, I think I've cracked it now, WOO! I've been very persistent on making the right banana bread and this one was just perfect, especially with some peanut butter and jam on top (yes, my obsession with PB is slightly on the verge of insanity), or even with a drizzle of honey!

Washed down perfectly with a glass of almond milk or even have this for your breakfast! Something quick and easy and ideal to eat on the go. Tomorrow I start my second semester of uni, after what feels like being off for so much longer than a Christmas break, and I'm ready to get back into the spring of things. This beauty will start my day off just right, also planning on a leg day tomorrow so getting in the good carbs to burn off at the gym.


INGREDIENTS

- 3 soft bananas

- 1 + 1/2 cup of flour

- 1/4 cup melted butter

- 1 egg

- 1 tsp vanilla extract

- 1 + 1/2 tbsp peanut butter

- White chocolate chips

- 1 tsp baking powder

- 1/2 cup of sugar

- Almonds flakes (optional)


WHAT TO DO

1. Preset your oven at 180 to warm up while you prep you mixture.

2. Using a large mixing bowl mash your bananas with a folk then add in your egg, melted butter, vanilla extract and sugar and whisk.

3. Once whisked add your peanut butter. Pour in your flour and baking powder. Your mixture should still be wet and the flour will have brought the consistency together looking more dough like.

5. Lastly add in your chocolate chips.

6. Pour mixture into a non-stick loaf tin, here you can sprinkle on your almond flakes if you wish, and place in oven for 50 mins. Remember to let cool once removing from the oven.
