Cinnamon Pancakes with Cinnamon Apples

Fancy a cinnamon treat or breakfast? Well, these pancakes are perfect for the occasion! I've recently become obsessed with the spice of cinnamon around Christmas and haven't stopped using it since. Firstly, I started making cinnamon apples and then I started using it my pancake mixture. Boy, I'm glad I did, they're so tasty!

INGREDIENTS
1 egg,
1 tsp cinnamon
2 tbsp of flour
1/2 mashed banana
1 tsp baking powder.
Mix all the above in a blender and pour onto a hot oiled pan. The mixture will make 2-3 pancakes.
Fluffy, thick Cinnamon pancakes, apples and banana = PERFECTION! I topped these babies with cinnamon apples (shock), honey and some banana on the side. I also sandwiched some cinnamon apple slices between my pancakes, all about them layers and the crunch! STACK GOALS!
CRUNCHY CINNAMON APPLE DIRECTIONS
Slice any apple and melt some coconut oil in a hot pan on medium heat. Place apples into the pan with a splash of water, sprinkle in your cinnamon spice (around 1.5 tbsp) and drizzle over some honey for that extra stickiness. Leave in the pan to simmer for 10 mins and serve. If you desire soft cinnamon apples, leave them in the pan for a little longer.
