Tuna Melt Sweet Potato Toasts

Perfect firey sweet potato toasts topped with tuna, jalapeños and cheese, then finished off with a hell of a lot of Sriracha Mayo sauce ontop! BEAUTIFUL!

Been meaning to make these for sometime and found the right size sweet potato in the Aldi yesterday. I would have preferred them a little softer but STILL filled a hole! So microwaved it first for 2 minutes to soften then sliced length ways into thick toast pieces (makes it so much easier to cut potato, especially if it's a beefy one!). Next, popped them into the microwave again to soften some more for about 5 minutes (use your judgement) and then place under the grill topped with tuna, jalapeños and cheese!
